  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened unsalted butter and granulated sugar with an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  4. Beat in the eggs one at a time, scraping down the sides if needed. Add the vanilla extract and mix until combined.
  5. Gradually add the flour mixture to the wet ingredients on low speed. Mix just until incorporated.
  6. Gently fold the rainbow sprinkles into the dough with a spatula, being careful not to overmix.
  7. Scoop dough using a tablespoon or small cookie scoop onto the baking sheets, spacing about 2 inches apart. Slightly flatten each dough ball with your fingertips for extra softness.
