This Spooky Apple Cider Caramel Sangria is a rich, autumnal, and dangerously drinkable Halloween party drink that comes together in just 10 minutes. It features a perfect balance of tart apple, rich caramel, and warm spice, and gets better as it sits in the fridge.

  • 1 bottle (750 ml) dry white wine (Pinot Grigio or Sauvignon Blanc)
  • 2 cups (480 ml) apple cider (unfiltered)
  • 1/2 cup (120 ml) caramel syrup (Torani recommended)
  • 1/4 cup (60 ml) bourbon or whiskey (optional)
  • 2 medium apples (Honeycrisp or Fuji), sliced thin
  • 1 medium pear (Bosc or Anjou), sliced thin
  • 1 cup (150 g) fresh cranberries
  • 2 cinnamon sticks
  • 34 whole cloves (optional)
  • 1 orange, sliced into rounds
  • Ice for serving

Instructions

  1. Wash and slice the fruit. Core the apples and pear (leave skin on) and slice into thin rounds or half-moons, about 1/4 inch thick. Slice the orange into thin rounds.
  2. Combine the liquids in the pitcher. Pour the entire bottle of white wine into a large pitcher. Add the apple cider, caramel syrup, and bourbon (if using). Stir gently with a wooden spoon until the caramel syrup is fully dissolved.
  3. Add the fruit and spices. Drop in the sliced apples, pear, orange rounds, and fresh cranberries. Tuck the cinnamon sticks and cloves down into the liquid. Give everything one more gentle stir.
  4. Chill for at least 2 hours. Cover the pitcher and refrigerate for a minimum of 2 hours, preferably overnight.
  5. Prepare the glasses (optional). For a caramel rim, dip the rim of each glass into caramel syrup, then into coarse sugar or crushed graham crackers. Let set for 5 minutes.
  6. Serve over ice. Fill each glass with large ice cubes. Stir the sangria, then pour into glasses, making sure each serving gets some fruit. Garnish with a cinnamon stick or extra cranberries.
  7. Add a spooky touch: float gummy worms in each glass, freeze small plastic spiders into ice cubes, or use dry ice for a fog effect (handle safely).

Notes

Don’t skip the chilling time—the magic happens when the apple cider and caramel marry with the wine. For a non-alcoholic version, replace wine and bourbon with 2 cups ginger ale or sparkling apple cider and increase apple cider to 3 cups. For a red version, use Merlot or Zinfandel. Add fruit no more than 3-4 hours before serving if making ahead to keep apples and pears from getting mushy.
