  • 8 oz cream cheese, softened
  • 1/2 cup crushed candy corn (about 2025 pieces)
  • 1/4 cup shredded sharp cheddar cheese
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 6 oz salami slices
  • 6 oz prosciutto, torn into ribbons
  • 8 oz sharp cheddar cheese, cubed
  • 8 oz gouda cheese, sliced
  • 1 cup seedless green grapes
  • 1 cup blackberries or raspberries
  • 1 cup mini pretzels
  • 1 cup pumpkin-shaped crackers or plain crackers
  • 1/4 cup whole candy corn, for garnish
  • Fresh rosemary sprigs for decoration
  • Star anise for decoration

Instructions

  1. Crush the candy corn: Place 1/2 cup of candy corn in a sturdy ziplock bag. Seal it tight, pushing out the air. Use a rolling pin to crush it into small pieces. Set aside 1/4 cup of whole candy corn for garnish.
  2. Make the spread: In a medium bowl, combine the softened cream cheese, crushed candy corn, shredded cheddar, honey, and salt. Mix with a rubber spatula until evenly distributed. Cover and refrigerate for at least 15 minutes.
  3. Shape the spread: Once chilled, scoop the spread onto a piece of plastic wrap. Shape it into a rough pumpkin or ghost form. Place it on your board in the center or slightly off to one side.
  4. Arrange the meats: Fold salami slices in half, then in half again, and arrange in small piles. Tear prosciutto into thin ribbons and drape loosely.
  5. Add the cheeses: Cube the sharp cheddar into 1/2-inch pieces and scatter near one corner. Slice the gouda into thin triangles and fan out near the meats.
  6. Fill in with fruit and crackers: Add grapes and blackberries in small clusters. Add pretzels and pumpkin crackers in little piles. Sprinkle whole candy corn around the edges and on top of the spread.
  7. Decorate: Stick rosemary sprigs behind the spread and place a star anise near the top if shaped like a pumpkin. Fill any empty gaps with extra crackers or fruit.

Notes

Chill the spread for at least 15 minutes to make it easier to shape. For a less sweet spread, reduce candy corn to 1/3 cup and add extra cheddar. For a dairy-free version, use vegan cream cheese and omit shredded cheddar. Assemble the board no more than two hours before serving. Let the spread sit at room temperature for 15 minutes before serving for best texture.
