  • 34 pounds pork shoulder (Boston Butt), trimmed of excess fat
  • 12 oz root beer (regular or diet)
  • 1 large yellow onion, sliced
  • 34 garlic cloves, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 ½ teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • About 12 slider buns
  • Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions

  1. Pat the pork shoulder dry with paper towels. Optionally rub with a mixture of brown sugar, smoked paprika, chili powder, salt, and pepper for about 5 minutes.
  2. Place sliced onions and minced garlic at the bottom of the slow cooker.
  3. Place the pork shoulder on top of the onions and garlic.
  4. Mix root beer, apple cider vinegar, and Worcestershire sauce, then pour evenly over the pork.
  5. Cover and cook on low for 6-8 hours until pork shreds easily with two forks.
  6. Remove pork and shred using two forks, discarding large pieces of fat.
  7. Return shredded pork to the slow cooker and stir to coat in the root beer sauce. Let sit on warm for 10-15 minutes.
  8. Toast slider buns lightly if desired, then pile pulled pork generously on each bun.
  9. Add optional toppings such as coleslaw or pickles.
  10. Serve immediately with your favorite sides.

Cook on low for best tenderness; avoid cooking on high to prevent drying out. Toast spices lightly before rubbing on pork for enhanced flavor. Save some cooking liquid before shredding to adjust sauce thickness. For quicker cooking, use an Instant Pot on high pressure for 60 minutes with natural release.
