This foolproof beer cheese fondue is built for the hearty, malty flavors of a good Oktoberfest beer, delivering a velvety texture that clings to a pretzel without being a gluey mess. It’s the perfect crowd-pleasing appetizer for parties, game days, or a cozy night in.

  • 1 cup Oktoberfest or Märzen beer
  • 8 ounces sharp white cheddar cheese, freshly grated
  • 8 ounces Gruyère cheese, freshly grated
  • 1 tablespoon cornstarch
  • 1 clove garlic, halved
  • 1 teaspoon Dijon mustard
  • 1 tablespoon unsalted butter
  • A pinch of nutmeg (optional)
  • Salt and white pepper to taste
  • Soft pretzels for serving
  • Optional dippers: sliced apples, crisp pear slices, chunks of crusty bread, or blanched broccoli florets

Instructions

  1. Grate both the cheddar and Gruyère and place them in a medium bowl. Add the 1 tablespoon of cornstarch and toss well to coat every strand of cheese. Set aside.
  2. Cut the garlic clove in half and rub the cut side all over the inside of your saucepan. You can leave the garlic halves in the pan for a stronger flavor, or discard them for a milder touch.
  3. Place the saucepan over medium heat and add the beer and butter. Heat until the mixture is just simmering—small bubbles forming around the edges, but not a rolling boil. This usually takes about 2-3 minutes.
  4. Reduce the heat to low. Add the cheese mixture to the pot in small handfuls, stirring constantly in a figure-eight pattern with your wooden spoon. Wait until each handful is almost completely melted before adding the next.
  5. Once all the cheese is melted and the mixture is smooth, stir in the Dijon mustard and a pinch of nutmeg (if using). Season with a tiny pinch of salt and a few grinds of white pepper.
  6. Transfer the fondue to a warm fondue pot or a small serving bowl. Serve immediately over a low flame. If it gets too thick, stir in a tablespoon of warm beer to thin it out.

Notes

For best results, use freshly grated cheese and avoid high heat. If the fondue separates, remove from heat and whisk in a teaspoon of lemon juice. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently with a splash of milk or beer.
