  • ½ cup light brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet inside the oven while it preheats.
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat with an electric mixer on medium speed for 2-3 minutes until light, fluffy, and pale in color. Scrape down the sides of the bowl.
  3. Add the egg and vanilla extract. Beat on medium speed for another 30-60 seconds until well combined and smooth.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  6. Fold in the chocolate chips with a rubber spatula until evenly distributed. Reserve a handful to press into the top if desired.
  7. Carefully remove the hot skillet from the oven using oven mitts. Transfer the dough into the skillet and press it into an even layer. Press reserved chocolate chips into the top if using.
  8. Bake for 18-22 minutes, until the edges are golden brown and set, and the center is still slightly soft. Start checking at 18 minutes.
  9. Remove from the oven and sprinkle with flaky sea salt if using. Let cool for 5-10 minutes before serving. Top with a scoop of vanilla ice cream and serve warm.
