  • 1/2 cup creamy peanut butter (natural, no-stir works great; I prefer the kind with just peanuts and salt listed)
  • 1/4 cup honey (or maple syrup for a vegan option; both work beautifully)
  • 1/4 cup chocolate protein powder (I recommend Orgain or Garden of Life for clean ingredients and great flavor)
  • 1/3 cup mini chocolate chips (dark chocolate chips are my favorite, but milk or semi-sweet work too)
  • 1 tablespoon chia seeds (optional, but adds extra fiber and omega-3s)
  • 1/2 teaspoon vanilla extract (pure vanilla extract makes a noticeable difference in flavor)
  • Pinch of sea salt (enhances all the flavors and balances the sweetness)

Instructions

  1. In a large mixing bowl, add 1 cup rolled oats, 1/4 cup chocolate protein powder, 1/3 cup mini chocolate chips, 1 tablespoon chia seeds (if using), and a pinch of sea salt. Give everything a quick stir with your spatula to distribute the ingredients evenly.
  2. Add 1/2 cup creamy peanut butter, 1/4 cup honey, and 1/2 teaspoon vanilla extract to the bowl. Start mixing with your spatula, pressing and folding until everything comes together. At first, it will look dry and crumbly—don’t panic. Keep mixing, and it will eventually form a cohesive dough. If it’s still too dry after a minute of mixing, add a teaspoon of water or milk at a time until it holds together when pressed.
  3. Cover the bowl and pop it in the fridge for 15 minutes. This allows the oats to absorb some of the moisture from the peanut butter and honey, which makes the dough easier to roll and gives the finished balls a better texture.
  4. Line a baking sheet or plate with parchment paper. Using a small cookie scoop or a tablespoon, portion out the dough. Roll each portion between your palms into a smooth ball. If the dough sticks to your hands, lightly wet your palms with water or rub a tiny bit of coconut oil on them. You should get about 14-16 balls, depending on how big you make them.
  5. Place the rolled balls on the prepared baking sheet and refrigerate for at least 30 minutes. This allows them to firm up and hold their shape. If you’re in a hurry, 15 minutes in the freezer works too.
  6. Once set, transfer the protein balls to an airtight container. They’ll keep in the fridge for up to two weeks.

Don’t skip the chilling step before rolling—it transforms the texture. If dough is too dry, add a teaspoon of milk or water at a time. If too wet, add a tablespoon of oats or a teaspoon of coconut flour. For perfectly round balls, use a cookie scoop. These taste even better the next day as flavors meld.
