Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add rolled oats, ground flaxseed, and shredded coconut (if using). Stir together until evenly distributed.
  2. Add the wet ingredients: Pour in peanut butter, honey, and vanilla extract. Make sure peanut butter is well-stirred.
  3. Mix thoroughly: Stir with a spatula until the mixture comes together into a cohesive dough (about 30 seconds of vigorous stirring).
  4. Add the chocolate chips: Fold in chocolate chips and a pinch of sea salt. Mix just until evenly distributed.
