  • 1 ½ teaspoons pumpkin pie spice (or 1 tsp cinnamon + ½ tsp ginger + ¼ tsp nutmeg + ¼ tsp cloves)
  • ¼ teaspoon salt
  • 8 oz cream cheese, softened to room temperature
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick spray.
  2. Make the crust: In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and a pinch of salt. Stir in melted butter until mixture resembles wet sand. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly. Leave oven on.
  3. Make the pumpkin layer: In a large bowl, whisk together ½ cup granulated sugar and ¼ cup brown sugar. Add eggs and whisk until smooth and slightly pale, about 1 minute. Add pumpkin puree, heavy cream, vanilla, pumpkin pie spice, and ¼ teaspoon salt. Whisk until combined and silky. Pour over pre-baked crust and spread evenly.
  4. Make the cheesecake swirl: In a small bowl, beat cream cheese with ¼ cup sugar until smooth and creamy. Add egg yolk and ½ teaspoon vanilla, mix until just combined.
  5. Create the spiderweb pattern: Drop spoonfuls of cheesecake mixture randomly over the pumpkin layer (about 8-10 dollops). Use a butter knife or toothpick to drag through the dollops in a swirling motion to create spiderweb lines.
  6. Bake at 350°F (175°C) for 35-40 minutes. Edges should be set and slightly puffed, center should jiggle slightly when shaken.
  7. Cool on a wire rack for 1 hour at room temperature. Then refrigerate for at least 3 hours, preferably overnight.
  8. Lift bars out using parchment overhang. Place on cutting board and slice into 16 squares. Wipe knife clean between cuts for neat slices.

Notes

For clean cuts, use a damp knife. Chill overnight for best flavor and texture. The spiderweb pattern is forgiving—messy swirls look organic and beautiful.
